HANCOCK COUNTY – Construction has completed on a commercial property on the county’s west side, where a Mexican restaurant recently opened and a coffee shop is on the way.

Mt. Comfort Plaza is on the west side of Mt. Comfort Road north of I-70, just north of Burger King.

Emmanuel Rosado of Mt. Comfort Plaza LLC said the project is nearly complete, with just some landscaping left and a final coating on the parking lot that both need to wait for warmer weather.

Rosado said the structure spans about 21,500 square feet and that the restaurant takes up about 6,000 square feet of that total. The remaining space can be divided into up to nine spaces, he continued, adding spaces can be as large as 4,800 square feet or as small as 1,600 square feet.

Ranchera Bar & Grill recently started doing business in Mt. Comfort Plaza and is open from 11 a.m. to 10 p.m. Monday through Thursday, 11 a.m. to 10:30 p.m. on Fridays and Saturdays, and 11 a.m. to 9 p.m. on Sundays. Patio seating will be available in warmer weather as well.

“The Mexican restaurant is really upper-end, a very nice layout and everything,” Rosado said.

Ziggi’s Coffee will have a location on Mt. Comfort Plaza’s south end, where it will have a drive-thru.

“We’re in the process of doing the permits and getting that stuff done,” he said.

The company is headquartered in Colorado and the franchisee behind the forthcoming Hancock County location also has a Ziggi’s Coffee south of I-69’s interchange with Ind. 13 in Madison County, Rosado said.

A dental office has also committed to leasing space at Mt. Comfort Plaza, Rosado said.

He said he is working with several others looking to set up shop in the plaza but is not yet ready to identify them.

“We’re looking forward to hopefully by midsummer we should have quite a few spaces open,” he said.

Rosado said he wanted the development to be diversified because of all of the logistics operations in the surrounding area.

“We wanted to offer the potential for different types of food, from early morning to late at night, because there’s a lot of shift work in the area,” Rosado said.
