Violations: C/R – both hand-washing sinks are for hand washing only, clean and sanitize before use, corrected; C – employees need to be mindful of when to wash hands – after opening boxes, handling paperwork, changing tasks, handling food, corrected; NC/R – food temperature measuring device should be scaled in Fahrenheit, accurate to plus or minus two degrees, need to calibrate all thermometers, corrected.

Violations: NC – need to have ice cream dippers stored in running water to flush particulates to the drain, corrected; produce cooler needs to be cleaned, shelving has build-up and mold-like substance, corrected.

Violations: C – all potentially hazardous food that are being hot held should be held at 135 degrees or higher, corrected/discarded; C – ready-to-eat potentially hazardous food prepared in house must be date-marked if held longer than 24 hours, ready-to-eat potentially hazardous foods prepared by food processing plant must be date-marked when opened, sandwich spread made in house and potato salad, macaroni salad, etc. must be date-marked and held for a maximum of seven days, corrected; C – expired lunch meat, milk, cottage cheese, Lunchables, etc., corrected/discarded; NC – need test strips for each type of sanitizing solution used.
